You Gotta Piccata

You can use a variety of plant based vegetarian meats for this dish, but the tofu pairs so well with the lemony piccata sauce we wouldn't change a thing.
Ingredients:
- 2 lb Medium Tofu
- 2 Lemons
- 1 cup Unbleached Flour
- Salt and Pepper to taste
- 2 tbsp Butter
- 4 tbsp Olive oil
- 3 tbsp Capers
Directions:
Combine olive oil and butter in hot cast iron and cook tofu in batches until golden brown.
Return the tofu to the pan to heat thru and simmer until sauce thickens.
