That’s a Wrap

In theory, wrap night should be easy, breezy and inexpensive. It never seems to turn out that way .. lol. So we put it in the $$$ expensive category tho admittedly that has more to do with the non-vegetarian options we often offer. But even nice sliced cheese and deli meat can add up, It certainly seems to cost more than our hummus night! Oh yeah, we've got to make hummus again soon ♥
Ingredients:
- 12 Flour Tortillas
- 2 lb Variety sliced cheeses
- 2 Packages Veggie Deli
- 2 cup Shredded Lettuce
- 2 Tomatoes Sliced
- 1 bunch Fresh Basil
- 0 lb Baby Carrots
- 1 Stalk Celery Sliced
- 1 cup Cherry tomatoes
- 1 Cauliflower, parboiled and cut into bite size
- 2 cup Sour Cream
- 0.5 cup Mayo
- 3 Crushed Garlic Cloves
- 2 tbsp Fresh Parsley Chopped
- 1 tsp Dill
- 2 tbsp Fresh Lemon Juice
- 0 Salt and Pepper to taste
- 16 oz Cream Cheese
- 3 Cloves Garlic
- 1 Small bunch fresh basil
- 2 tbsp Fresh Lemon Juice
- 1 Small bunch fresh parsley
- 0.5 cup Scallions
- 0 Salt and Pepper to taste
Directions:
1. Prepare the garlic herb dip by combining the sour cream, mayonnaise, 3 crushed garlic cloves, chopped parsley, dill and 2 tablespoons lemon juice in a mixing bowl. Season with salt and pepper to taste. Cover and refrigerate while preparing the rest of the meal.
2. For the herbed cream cheese spread, allow the cream cheese to soften to room temperature. Finely chop the basil, parsley and scallions, and mince the remaining 3 cloves of garlic.
3. Combine the cream cheese, fresh herbs, scallions, garlic and remaining 2 tablespoons lemon juice in a food processor. Blend until smooth and creamy. Season with salt and pepper to taste. Refrigerate until ready to serve.
4. Wash and prepare the vegetables. Shred the lettuce, slice the tomatoes, separate the basil leaves and arrange everything on serving platters.
5. Prepare the vegetable platter with baby carrots, sliced celery, cherry tomatoes and the parboiled cauliflower. Serve with the chilled garlic herb dip.
6. Arrange the sliced cheeses and veggie deli selections on separate platters. If offering additional non-vegetarian options for family or guests, keep those on their own serving plates.
7. Warm the flour tortillas briefly in a dry skillet or microwave until soft and pliable. Keep covered with a clean kitchen towel so they don't dry out.
8. Set everything out buffet-style and let everyone build their own wraps! Start with a tortilla, spread with the herbed cream cheese, then layer on your favorite cheeses, deli slices, lettuce, tomatoes and fresh basil.
9. Fold in the sides, roll everything up snugly and slice in half. Serve alongside the fresh vegetable platter and garlic herb dip.
In theory, wrap night should be easy, breezy and inexpensive. In practice, everyone wants something different and suddenly you've got a whole deli counter on your kitchen table! But that's half the fun. ♥
