Kick Ass Crunch Wraps

Ingredients

  1. Slice peppers and onion and saute until soft and slightly brown
  2. Prepare the veggie meats so they are cooked through (we used the microwave to heat up the crumble, and the oven to cook the chickie while we prepared the peppers and onions above.
  3. Place 8 large flour tortillas around the edge of a large sheet pan, draping each over the edge. Then place one tortilla in the middle so that no tray is showing through.
  4. Next top with 9 cheese slices
  5. Place half of the veggie meat mixtures on each side of the pan.
  6. Spoon half of sauted onions and pepper over top.
  7. Cover with another 9 slices of cheese.
  8. Place two tortillas in the center and then carefully fold edges of bottom layer of tortilla up.
  9. Cover with a second baking sheet and repeat with another baking tray until you have prepared two full trays. Note: We actually made four trays for our family of 11, so that we had plenty for lunch the next day!
  10. Bake in 375˚F oven for 20 minutes, then remove the top baking tray and continue baking for another 15 minutes until lightly brown and crispy.

Note

Notes:  For EXTRA CRUNCH, fry six corn tortillas in oil and drain.  Layer them in the middle of your veggie filling and cheese.  YUM!!
