Wikipedia defines Hotdish as: a casserole dish that typically contains a starch, a meat, and a canned or frozen vegetable mixed with canned soup. While we have no Minnesota food traditions in our family potluck, once we learned about this budget minded casserole we’ve tried several iterations each with their own appeal. Tonight we used a vitamix mushroom soup, with veggie crumble (as well as a ground beef skillet for those people in our home who prefer meat dishes) and a can of peas. The colby jack cheese brought all of the flavors together in a wonderful hot meal that was easy and inexpensive to make and bake.

  1. Prepare the mushroom soup in your blender or vitamix. We used the "soup setting" which created a thick lovely mushroom cream base for our hotdish. Wash mushrooms and place in blender or food processor. Add milk, half of the cheese cut into cubes and creamcheese. Season to taste. Blend until smooth.
  2. Saute your crumble Add your mushroom soup. Top with drained canned or frozen peas. Sprinkle with remaining cheese either grated or cut into small cubes.
  3. Arrange your frozen tater tots in concentric circles on top (or toss them on in a single layer) Bake at 400° for 30 minutes. Serve HOT!
