Bran Breakfast Muffins

Ingredients:

  • 2.5 cup Extra Bran Spelt Flour
  • 1.5 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 2 Eggs
  • 2 Bananas
  • 0.5 cup Greek Yogurt
  • 0.25 cup Light Tasting Olive Oil
  • 1 cup Milk of choice
  • 2 tbsp Brown Sugar
  • 2 tsp Vanilla
  • dash Spices
  • Dark Chocolate Chips

Directions:

We blend our flour in the vitamix to create a lighter consistency than our countertop grain mill can produce. So it was easy work to just add the remaining ingredients to the vitamix and blend for a couple minutes to create a smooth batter.
Pour into lined or greased muffin pans. This batch made 24 mini and 12 regular size muffins We also sprinkled half with dark chocolate chips. Bake at 375° for 20 minutes or so depending on size of your muffins
