Seriously Dark & Delicious Whole Grain Brownies

Ingredients:

  • 2 Cored Apples
  • 0.5 cup Maple Syrup
  • 1 cup Non Fat Plain Greek Yogurt
  • 0.5 cup Olive Oil
  • 4 Eggs
  • 2 tsp Vanilla
  • 2 cup Whole Grain Spelt Flour
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 1 cup Dark Cocoa Powder
  • 0.5 cup Dark Chocolate Chips

Directions:

Place your cored apples, with peels, in your blender and process until you have small chunks. Next add your other wet ingredients (yogurt, oil, eggs, vanilla) and blend until smooth.
Combine your dry ingredients (flour, cocoa, baking powder, salt) in a large mixing bowl and add the mixture from your blender and stir until just smooth. Do not over mix. Pour into a parchment lined roasting pan (9x13, 10x14) and top with dark chocolate chips. Bake at 350° for 20-30 minutes depending on your oven and how gooey, chewy you like your brownies.
