From sauces to seitan and of course soups, a good vegetable stock makes a meal.  We prefer to use the instant pot and store the broth in mason jars to use for at least 2-3 days.

  1. A basic mirepoi (carrots, celery, onion) is all you need to make a good vegetable base. But make a stock is a good time to make use of left over vegetables in your fridge. If I am planning ahead, I like to include a yam. I find it give a hint of sweetness and pairs well with the knob of ginger I always add to my broths. Remember to keep the peel on your brown or yellow onion it adds a nice "beefy" color to the broth. Wash and rough chop all of the vegetables and fill the IP up to the MAX line. Set to pressure cook for 45 minutes and with a quick release you are ready to go.
