Impossible Party Pan Quiche

We feed a crowd every night, but these baking dish quiche casseroles make serving 10-20 people a snap. We doubled this recipe and made one with turkey and smoked Gouda for those people in our family who are meat eaters. The vegetarians had a non-smoked Gouda, with half mushroom. Plus we used the dips left over from Shark-Cuterie night to make lovely crostini. The “impossible” pie phenomena was popular in the 1970’s where you could find it on the back of a box of Bisquick. We used whole grain spelt and added baking powder for our version, and are pleased to see that it still makes a lovely bottom layer as well as a crispy top crunch.

  1. Preheat oven to 375° Lightly scramble eggs and combine with milk in very large bowl. Sift together baking soda, salt and pepper with flour and add to your wet ingredients and mix well.
  2. Melt butter and add olive oil and brush along the bottom and sides of your pan. Saute mushrooms (we microwaves with a little butter) for 3 minutes. Then place in your baking dish, with your grated cheese.
  3. Pour batter over the top of your filling ingredients. Bake in a preheated oven for 40 minutes. Let REST for 10 minutes, then serve.
