High Fiber Low Fat Breakfast Bars

Karma swears by Nature’s Path Organic Smart Bran Cereal it is a subscribe and save staple on Amazon for years. With 17g of fiber it is an important part of her GI protocol. But not every one is a fan of eating fiber cereal every day, so making alternative muffins or bars can be a helpful offering for other family members who may want to increase their fiber intake. These moist bars have a soft brownie consistency but are low fat and minimal sugar. By placing a few chocolate chips on the top before baking, it gives the look and feel of something decadent and your taste buds hit the sweet morsel first making it a delightful mouth feel. We cook these on a 16″ x 24″ baking pan. With one serving being 4″x6″ square.

  1. TWO BOXES of Nature's Path Organic Smart Bran Cereal in the blender will turn into about four cups of bran "flour". Combine with four cups of whole wheat flour and mix in your baking powder and salt
  2. Place your egg whites, banana and apple slices (removing the core, but keeping the peel) .. in your vitamix or food processer and blend until smooth. Our vitamix was big enough to add the four cups of milk also. Add your wet ingredients to your dry and mix with a wooden spoon.
  3. Your batter will be THICK. Place onto a lightly oil sprayed parchment paper and spread evenly. We lightly sprayed a spatula which made it easy to press out into all the corners without sticking.
  4. Sprinkle the top with blueberries and just a few chocolate chips. Bake into a 400° oven for 30 minutes. Serve warm or cold. Freezes well.
