Tricia works hard to create healthy food options for her boys.  Fresh foods, vibrant colors, tiny finger portions always make their kiddie plates festive.  When it comes to dessert snacks, she tries hard to create minimally sweet and relatively healthy alternatives.  These sugar cookies made the cut!  They are remarkably soft, easy to roll, cuts well into shapes and are fun to make with little helpers. And her royal icing uses no corn syrup! But these cookies are yummy all on their own!

Royal Icing

Simple Syrup

Instructions

  1. Mix cream cheese and sugar with a hand mixer until creamy. Add eggs and mix. Add yogurt and mix. Combine dry ingredients in a separate bowl, then stir them into the wet ingredients by hand. Chill over I in a plastic bag. Roll onto a floured surface and cut out with your favorite cookie cutters. Bake on parchment paper at 350 for 12 - 15 min (depending on cookie size)

Royal Icing

  1. In mixing bowl combine powdered sugar and milk, then with a hand beater mix in 4 TBL of the simple syrup. You can add milk as needed by the TBL to make icing thinner.

Simple Syrup

  1. Combine water and sugar in a small sauce pan over medium heat and stir until dissolved. Turn heat down to low and simmer uncovered to reduce, about 10 minutes.
