Healthier Chocolate Cake

Ingredients:
- 1.75 cup Whole Wheat Flour
- 0.75 cup Unsweetened Cocoa Powder
- 2 tbsp Baking Powder
- 0.5 tsp Salt
- 2 Eggs
- 0.3 cup Oil
- 0.5 cup Sugar
- 2 Ripe Bananas
- 1 tbsp Vanilla
- 1 cup Soy Milk
- 1 cup Hot Coffee
- 14 oz Soft (or silk) Tofu
- 0.25 cup Soy Milk
- 1 tbsp Maple Syrup
- 12 oz Vegan Chocolate Chips
- 5 tbsp Instant Coffee
- 3 tbsp Boiling water
- 0.25 cup Powder Sugar
Directions:
Sift dry ingredients together in a medium bowl
Combine instant coffee and hot water in a mixing bowl and beat until frothy. For a thicker decorative frosting add powder sugar and continue to whip until thick. This dalgona coffee whip pipes nicely and will hold a spiral tip pattern just fine.
