“Finding a minimally toxic waffle iron is the bane of my existence.” says Karma. Sadly they don’t make cast iron electric waffle makers and the stove top manual cast iron plates are hit and miss in terms of sticking in our experience. Though we do have a lovely collection of vintage cast iron stove top waffle pans. Currently we look for ceramic, and at least some description that says it is PFOA, PTFE and BPA free. But admittedly even within the company there is often disagreement weather those statements are actually true. On this Sunday, we used two new ceramic models for the first time. One was a cool vertical waffle maker that you pour the batter right in the top of the unit. Oster Titanium-Infused DuraCeramic Waffle Maker Model CKSTVWF1  and the other was a lovely almost pizzelle like heart shaped waffle pan — Euro Cuisine WM520 Eco Friendly Heart Shaped Waffle Maker – PTFE and PFOA Free Non Stick Plates,Silver 8 inch . Both were excellent. The Oster makes a fluffy big belgin waffle and the little heart shaped thin hearts were simply adorable for little grandkiddo hands.

  1. We grind wheat berries fresh when we use flour. Today we had organic spelt berries. Using our countertop grinder, we made four cups of whole grain flour. But then for an extra "cake flour" texture we put the flour into our vitamix along with the baking powder, baking soda and sugar. We blend those together (on smoothie setting :) )
  2. In your stand mixer (or by hand if you want a work out) whip the egg whites until soft peaks. Then set aside.
  3. Add your liquid ingredients including the egg yolks and mix until combined. Add the flour (that already has the baking soda, powder and salt) into your wet mixture and combine (do not over mix your flour). Then gently fold in the egg whites.
  4. Bake according to your waffle maker instructions. We found the ceramic to be non-stick with minimal oil spray on the first batch. When the steam stopped, we took the waffles out.
