Whole Grain Apple Spice Bundt Cake

Pandemic birthdays are always hard, and this is our third since the shelter in place orders. But we do a good job at coming together around food regardless.  With the help of WebPartyTime.com Jax was able to celebrate his 1st birthday surrounded by family and friends from all over the country.  On our end, we milled wheat berries for flour and made a lovely little spice bundt for his “smash cake”.  It actually turned out to be a lovely moist cake.

Instructions

  1. After coring the apples, give them a rough chop and place in the food processor to make a chunky applesauce. We leave the peel on!
  2. In a mixing bowl cream together the eggs, sugar, oil and vanilla. We are finding flour hard to find, so we purchased some 50 pound bags of both soft white and hard winter wheat berries. For cakes, the soft white is preferred because it has a lower gluten content. For the cake, we double sifted the flour to remove a portion of the bran. The resulting flour was close to a whole grain cake flour. We used our masks for sifting since it kicks up a lot of dust. Combine the rest of the dry ingredients and gently fold in the wet including the home made applesauce.
  3. Lightly oil a bundt cake pan and bake for about an hour in a 350 degree oven. Let the cake cool completely before frosting.

Whipcream Frosting

  1. This is our family favorite frosting. It's light, not too sweet and goes well with a wide variety of cakes. In a mixing bowl, combine the creamcheese, sugar and vanilla. Beat well, then slowly drizzle the heavy whipping cream continuing to beat the frosting until light and fluffy. Do not over whip.

Make Do Frosting

  1. We took the raw sugar and used a stick blender with a towel over the top of a mason jar to prevent a dust storm to try and come as close to powder sugar as we could. We then used a mixer to beat the cream cheese, our somewhat fine sugar, vanilla and just enough milk to make an icing that would drizzle over the top of the cake.
