Skillet Hash Browns

I thought about Skillet Latkes because the flavor is reminiscent but the wonderful part of this easy breakfast feature, is not having to add eggs, flour or stand at the stove cooking each one in oil. At our house .. Less Standing = More Spoons for Other Things.

Instructions

  1. Place your potatoes and onion in the food processor with shredding blade, or grate by hand. Mix well and season with salt, pepper. You can add onion powder, garlic powder or other seasonings as you prefer. Squeeze out the excess liquid.
  2. Get your cast iron skillet super hot and add oil to coat the bottom. Pour your shredded potatoes and onions into the pan and spread to level it all out even. Cover and cook over low heat for 10 minutes.
  3. Transfer to oven and broil (low) for another 10 minutes or until golden brown on top and potatoes are cooked through.
