We don’t always have fresh greens.  But when we do, we make sure to embellish and eat them right away.  Chefs salad is great because we can literally use anything.  Asian inspired salad with mandarin oranges is a family favorite.  Slaws galore.  And we’ve even added a dry ramen noodles salad to our mix.

Instructions

  1. When we can get fresh greens we make salads. We make salads for everyone and often dress them before serving them individually.

Ginger Dressing

  1. We blend all of the ingredients in a mason jar and use with a side salad featuring mandarin oranges. Or a main dish with fried tortilla strips and Gardein mandarin chicken or plant based buffalo wings.

Mustard Vinaigrette

  1. Sometimes we blend our "Italian dressing" with non-smoked provolone or a mozzarella cheese stick. If salad is our meal we add plant based deli, hard boiled eggs, pasta, corn or cheese. (On this night, the redneck asked for "thousand island" .. so mayo, ketchup, pickles BOOM! As you wish ♥)

Ranch

  1. Ranch dressing is wonderful on a side salad or as a dip with crunch wraps.

Simple Slaw Dressing

  1. Slaw moves from a side to a main dish with pasta shells and or chopped hard boiled egg. For a twist on cabbage salad, use crushed ramen noodles pre-soaked in ginger dressing then tossed with sliced nappa cabbage and carrots.

Vitamix Catalina Dressing

  1. You can make this with a stick blender or food processor to puree the celery and onion to a smooth and creamy dressing with the perfect blend of sweet and tangy goodness. Place all of the ingredients in your Vitamix personal size cup and use the soothie setting to blend until smooth. Serve with fresh greens or a tangy dip for chickie nuggets, veggie burgers or taco salad!

Non-Dairy Green Goddess Dressing

  1. Place sliced avacado, the juice from two lemons, fresh basil, mayo, water, oil, salt and pepper into blender and puree until light and creaming goodness
