Last week the store was out of buttermilk .. of all kinds. Actually MILK has been hard to come by at Walmart lately where I shop online. So I decided to try kefir in our weekend flapjacks. And I was delighted with the result. The fermentation in the yogurt like liquid helped activate the baking powder and soda to make for a very light and fluffy stack. In truth .. I ended up BURNING most of the batches because the natural sugars in the kefir are almost TWICE that of regular buttermilk. Making it a less desirable choice for someone who is blood sugar sensitive. And as we saw, makes them tend to burn quickly. I would suggest cooking them on a LOW heat.

Mix the liquid ingredients until well blended and stir the dry ingredients in until just incorporated. Cook on low flame to avoid burning :p
