Each of us have our own set of cooking styles and skills.  Tricia is the saucier, Karma makes a mean lasagna, and Dan … well he’s the epicurean of the bunch.  He has the fancy bluetooth devices, all the gadgets, the aprons, the gloves … he takes the same effort making a meal for one as he does the 10 of us.  So tonight when he was fixing his special pork carnitas tacos that slow cook all day then broil to crisp, it was no surprise that the gardein pork and beef version was no less than amazing.  Check out the cheese tortillas.  Mad skills, I tell you 😉

Dan’s Street Taco Pop-Up ☆☆☆☆☆

  1. Sauté the Gardein protein in a pan over medium heat.
  2. Get your cast iron VERY HOT Then carefully place about a quarter cup of shredded cheese directly onto the pan.
  3. As the cheese starts to melt down and begins to brown around the edges. Press a corn tortilla over top and continue to cook for another minute or two.
  4. Gently loosen the melted and browned cheese and flip once to cook tortilla on the other side.
  5. Assemble your taco with the Gardein, avocado and salsa and sour cream if you like.
