Biscuit Dip Dinner

This was a risky night meal. Which means Grandma Karma is trying something new. Not something viral on the Instagram which at least has some semblance of a following that says it’s worth the effort. But something she probably thought of at 3 in the morning in-between arguing with people on the Internet or playing solo Scrabble against a bot who’s also awake at all hours. This was decidedly a hit or miss attempt at yummy. So to be completely transparent we also cooked a pound of pasta and made a BIG SALAD .. just in case. Fortunately it was really yummy.  How could it not be? Pairing a classic spinach and artichoke “dip” with southern flakey biscuits all in one over sized cast iron pan.

Instructions

  1. Saute the spinach with garlic until wilted. Drain. Cut the cheese into cubes and place in food processor. Pulse to chop the cheese, then add the artichoke hearts and continue pulsing. Add the spinach and remaining ingredients for the dip and pulse until well incorporated but not totally smooth. Pour into cast iron pan.
  2. Place the dough dry ingredients in a large bowl and cut the butter into slices and mix in with your hands until the butter is crumbled into the flour. Add your wet ingredients and combine with your hands just until it begins to come together. Pour the raggy dough onto your cutting board and press together. It will look like it won't form a dough, but trust that it will and do not be tempted to over work it. Roll the dough out into a large rectangle, then using a pastry scraper fold up like a business letter in thirds. Turn it 90° and roll it out again into a large rectangle. Repeat this FIVE TIMES. This is how you get a really flaky biscuit with good height.
  3. Slice into rectangles, squares or cubes as desired.
  4. Then place atop your spinach base in the cast iron pan. Avoid the temptation to place one large circle of dough on top, because it will not rise as well as separate biscuits. Bake in a 375° oven for 25-30 minutes. Serve with a large salad -- but you don't need to make pasta, because it's more than filling all on it's own ;)
