Given my Karma’s propensity for bread making you would think that the first thing she would make in her new (refurbished) kitchaide stand mixer would be bread dough, or pizza crust or something with the fancy bread hook. But after the redneck ran a cable track for electric to the new mixer’s home we were all too tired to be doing any baking today. But after dinner, still wanting to christen the new addition, we whipped up a batch of banana chip cookies or rather “cakie” because that better describes the wonderful soft texture and admittedly she may be watching too much Gabby’s Dollhouse with her grandkids.

Instructions

  1. Place the butter, egg and bananas in your mixer bowl and beat until combined. Add the sugar (may omit) and vanilla and continue to beat until creamy and light. Add the flour, baking powder and salt and mix on low until just combined. Stir in chocolate chips. Scoop onto parchment lined trays and bake at 350° for 10 minutes.
