Yam Seitan BBQ Ribs

While chickpeas and vital wheat gluten make a classic textured protein seitan, some of us are not able to digest beans. So tonight we tried substituting cooked yam and the texture was lovely and worked well for our instant pot BBQ ribs.

Instructions

  1. Place the ingredients for the BBQ sauce in a medium sauce pan and simmer on low for at least 15 minutes.
  2. Place onion, carrots and water food processor and blend until smooth. Add yam and softened butter and puree.
  3. Add vital wheat gluten and salt and process at least 3 to 5 minutes. Roll out into a large rectangle.
  4. We nest a smaller steam bowl inside our instant pot, on top of a steam rack. Roll the seitan on the outside of the small pan, draping over into the center if necessary and carefully lower into the instant pot. Add one cup of water and cook for 1 hour. Then let natural release for 10 minutes.
  5. Carefully remove from instant pot and slice seitan into rib size pieces (3-4 inches).
  6. Place in roasting pan coat with BBQ sauce and bake for an hour at a 350° oven until browned and sticky.
