That Egg Sandwich Thang

From tik tok dances to name-my-pet challenges, sometimes you just want to jump on a trending topic.  And right now it seems everyone is making this one pan egg sandwich.  We often make eggs for breakfast for at least 8 of us who are up early in the morning.  But egg burritos or french toast on a double griddle or even waffles (with two irons going) are much more time efficient.  We even tried freezing egg scramble in tortillas but the defrost process for 8 plates was still decidedly more time consuming than making them fresh.  Our egg bytes on the other hand freeze well.  But in truth, we eat those so fast they never seem to get in the freezer.

So long story short we tried this trending recipe.  After watching countless videos, some which used strawberry jam, some with ham some with half a slice of bread.  We decided to go basic, two slices of french bread.  But even using two pans on the stove, this took a VERY LONG TIME to make all the egg sandwiches we needed.  Seriously, this might be fun if you are cooking for one and for some reason think eggs ever needed more than one pan so you found that novel … but for us, even though these were super tasty, they certainly weren’t worth the effort cooking for a crowd.

  1. Place your fry pan on low heat (or the eggs will cook too fast) Scramble two eggs in a shallow bowl and dip ONE SIDE of the bread into the egg. Place your oil or plant butter in the pan Pour the rest of the scrambled eggs into the pan making sure it coats the whole bottom of the pan Then place your two slices of bread plain side down on top of the eggs about one inch a part
  2. Wait until the eggs are cooked all the way through and they are loose from the bottom of the skillet Then carefully flip the entire bread omelet over and cook another 1 to 2 minutes until bread is toasted.
  3. Using tongs, fork or chopsticks, fold the egg onto the top slices of bread Place cheese on one side
  4. Then carefully fold the bread to form your egg sandwich.
