Ingredients
  • 2 pounds Medium Tofu
  • 2 Lemons
  • 1 cup Unbleached Flour
  • Salt and Pepper to taste
  • 2 tablespoons Butter
  • 4 tablespoons Olive oil
  • 3 tablespoons Capers
Instructions
  1. Drain tofu and slice each brick into five cutlets. Season your flour and lightly dredge each strip of tofu on all sides.
  2. Combine olive oil and butter in hot cast iron and cook tofu in batches until golden brown.
  3. Set tofu aside and deglaze the pan with the vegetable broth, scraping all the flavorful bits from the pan. Add the lemon juice capers and butter.
  4. Return the tofu to the pan to heat thru and simmer until sauce thickens.
