XL Apple Hootenanny

Perfect for your extra large 15" Cast Iron Skillet, if you are using a standard skillet reduce the serving size to exactly 5.333 and it will work perfectly for your 10" fry pan. We used freshly milled wheat berries for 100% Whole Grain Flour and kept the peels on the apple. What's lovely about this custard like creation is that it's easy enough to make even on a busy morning. A couple minutes to saute the thinly sliced apples and only minutes in the oven for this souffle to rise to perfection.

Ingredients
  • 6 tablespoons Butter
  • 1.5 cup Apples Thinly Sliced (2-3 Apples depending on size)
  • 6 Eggs
  • .75 cups Whole Milk
  • .75 cups Whole Wheat Flour
  • 2 tablespoons Sugar (You will be sprinkling with powder sugar and/or serving with maple syrup it really doesn't need more than this.)
  • 1 teaspoon Vanilla
  • .5 teaspoons Sea Salt
Instructions
  1. Preheat oven to 400° Thinly slice your cored but not peeled apples. Melt butter in your cast iron fry pan and take half of the butter out for your batter (you can place it directly into your blender) Let the apples simmer on medium low heat for five minutes until just tender
  2. In your blender combine the reserved melted butter, and the rest of your batter ingredients and process until smooth. When your apples are tender, pour your batter into the pan and put your skillet in the oven Cook for 18 minutes. Dust with powder sugar (optional) and serve with maple syrup (optional.)
