Vegan Black Bean Brownies

Tricia made these with her kids and they absolutely loved them and so did everyone else! It's been a while since we've made a bean cake. Tricia switched it up a bit and decided to make these vegan (no egg whites). And they were every bite as delicious. High fiber and protein, low fat and minimal sugar. These would make a lovely breakfast or mid-day snack. Filling and satisfying all on their own.

Ingredients
  • 15 ounces Black Beans drained
  • .25 cups Olive Oil
  • .25 cups Maple Syrup
  • .5 teaspoons Baking Powder
  • .25 teaspoons Salt
  • 1 teaspoon Instant Coffee
  • .67 cups Fiber Cereal (Use oat bran cereal for gluten free)
  • 2 tablespoons Coca Powder
  • .5 cups Dark Chocolate Chips
Instructions
  1. Place the fiber cereal in the food processor and blend until it has a flour consistency. Next add your canned, rinsed and drained black beans and process until smooth. Add the remaining ingredients except the chocolate chips and continue to beat until well incorporated.
  2. Place in a parchment lined 8x8 baking dish or a pie plate. Top with chocolate chips. Bake in a preheated oven at 350° for 30 minutes. Let cool at least 15 minutes before slicing.
