Redneck Tapenade for Wrap Night

Okay it's not tapenade by any means, but it's a cool word that sounds fabulous and sometimes words (recipes) are more poetic than non-fictional prose.  And this cheese dip has olives in it so tapenade it is!   If we had cream cheese in the house I would have used 8 ounces instead of the quarter cup of mayo in order to give it a creamy spread for the wraps tonight.  Heck if we had cream cheese we would have mixed it with herbs for a preferred spread for the tortilla wraps!

Ingredients
  • 2 Mini red peppers, seeded
  • 1 pound Colby Jack (Cheddar, Swiss, Mozzarella, almost any cheese will work)
  • 8 ounces Green pimento stuffed olives
  • .25 cups Mayo
  • salt and pepper to taste
Instructions
  1. Place the pepper and cheese (roughly chopped) in a food processor and pulse until the cheese crumbles and the pepper is well chopped. Then add the green olives (drained) and puree until spreadable consistency. Salt and pepper to taste.
