The Instant Pot makes quick and easy vegetable broth that tastes like you simmered it all day.  But what if you don’t have even an hour extra and you want to make home style gravy?  With a good roux, you can make gravy with almost anything you have on hand.  Tonight we had a handful of mushrooms, a small onion and determination to make a rich gravy to serve with boiled fries.

  1. Rough chop mushrooms and onion. Size and shape doesn't matter we will hand blend and strain.
  2. Place in a hot cast iron pan and stir occasionally. No oil is needed, you want a dry heat roast to deepen the flavor.
  3. Meanwhile, get your juicer and run your carrots and celery through until you have about 1 cup of juice. (If you don't have a juicer, you can substitute four cups of vegetable broth and omit the water.)
  4. When your onions and mushrooms have dry roasted color, add a stick of butter and stir until melted.
  5. Add a half cup of unbleached flour and stir until well combined.
  6. Pour your juice into the roux mixture followed by the water one cup at a time and stir until you have a thick sauce. Add soy sauce and any seasoning you want (salt, pepper, garlic powder ... to taste) Using a stick blender, puree the contents in the pan carefully .. it will be hot.
  7. Depending on what you are serving you may choose to strain the gravy before serving. We choose to strain the gravy for the light and fluffy texture of our home fries.
