We’ve made lots of seitan over the years. But this version of seitan uses the instant pot for a really quick and easy method. No cheese cloth needed. In this recipe we used an herbal peach tea for the simmering broth .. much like an orange chicken combines sweet and savory flavors. But you can use any simmering sauce you like depending on the dish you are creating.

Combine your dry ingredients in food processor and pulse until the garbanzo beans and onions are coarsely chopped and blended with your gluten. Add the margerine and process another few pulses then quickly add the water while the blade is running and continue to blend until a sticky dough forms. Transfer dough to a large bowl and kneed with your hands for at least 10 minutes. The kneading is important as this is what will give the seitan the chewy texture. Slice the seitan into chunks or steaks and add to your instant pot.

To make the simmering broth, add your tea bags to boiling water and steep five minutes. Discard tea bags and add your remaining seasonings and add to the instant pot. Set to cook for 25 minutes then natural release for 10 minutes. If you like, you can quickly pan fry the cooked seitan to give it a crispy texture.
