Quick and Easy Seitan
Ingredients:
- 2 cup Vital Wheat Gluten
- 15 oz (can) Garbanzo Beans (drained)
- 4 cloves peeled garlic
- 1 TBL brown sugar
- 0.5 cup Vegan Margerine
- 1.5 cup Water or Vegetable broth
- 1 tbsp salt
- 0.5 Onion
- 4 cup Boiling water
- 4 tea bags herbal peach tea
- 0.5 tbsp sugar
- 2 tbsp salt
- 1 tsp garlic powder
- 3 tbsp minced onion
Directions:
Place the 4 peach tea bags in 4 cups boiling water. Let steep for about 10 minutes, then remove the tea bags.
Stir ½ tablespoon sugar, 2 tablespoons salt, 1 teaspoon garlic powder, and 3 tablespoons dried minced onion into the hot tea. Set this cooking broth aside.
In a blender or food processor, combine the drained garbanzo beans, garlic cloves, half onion, vegan margarine, brown sugar, 1 teaspoon salt, and 1½ cups water or vegetable broth. Blend until mostly smooth.
Place the vital wheat gluten in a large mixing bowl. Pour in the blended garbanzo mixture.
Stir until a dough forms, then knead by hand for about 3–5 minutes, until the mixture is firm and elastic. Avoid over-kneading or the seitan may become overly tough.
Divide the dough into several pieces and flatten or shape them into thick cutlets or irregular chunks.
Bring the prepared peach-tea broth to a gentle simmer in a large pot. Do not let it reach a hard boil.
Add the seitan pieces, cover partially, and simmer gently for about 45–60 minutes, turning them occasionally. They will expand as they cook.
Remove the seitan from the broth and allow it to cool slightly. Slice or tear it into the desired size.
For browned edges, sauté the cooked seitan in a lightly oiled skillet for several minutes on each side before serving.
