6 cups Whole Grain Flour (We used winter wheat berries sifted only lightly to remove about one cup of brain from almost 10 cups of flour.)
1.5 teaspoon salt
2 tablespoons sugar
2 tablespoons molasses
2 tablespoons honey
2 teaspoons cinnamon
.25 teaspoons Cardamom
Dash of clove
1 cup sourdough starter (You can sub 2 Tbl active yeast)
2 cups Warm water
3 tablespoons olive oil
Instructions
Combine the flour and dry ingredients in a large bowl. Add the starter and water and oil and combine until the flour forms a ball. Kneed for 10 minutes.
Let rise in oiled and covered bowl until doubled in size. If you are using your own sourdough starter this may takr 5-8 hours or longer. If you use rapid rise yeast, it may take only two hours.
Carefully pour the dough into an oiled large cast iron pan.
Bake in a 375° oven for 35 minutes or until the bread is golden brown and bottom taps a hollow sound.
