Molasses Honey Bread

Cardamom and Cinnamon make this spicy and slightly sweet bread perfect to accompany a dinner salad or breakfast cup of coffee.

Ingredients
  • 6 cups Whole Grain Flour (We used winter wheat berries sifted only lightly to remove about one cup of brain from almost 10 cups of flour.)
  • 1.5 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons molasses
  • 2 tablespoons honey
  • 2 teaspoons cinnamon
  • .25 teaspoons Cardamom
  • Dash of clove
  • 1 cup sourdough starter (You can sub 2 Tbl active yeast)
  • 2 cups Warm water
  • 3 tablespoons olive oil
Instructions
  1. Combine the flour and dry ingredients in a large bowl. Add the starter and water and oil and combine until the flour forms a ball. Kneed for 10 minutes. Let rise in oiled and covered bowl until doubled in size. If you are using your own sourdough starter this may takr 5-8 hours or longer. If you use rapid rise yeast, it may take only two hours. Carefully pour the dough into an oiled large cast iron pan. Bake in a 375° oven for 35 minutes or until the bread is golden brown and bottom taps a hollow sound.
