Mixed Emotional Greens

We don't always have fresh greens.  But when we do, we make sure to embellish and eat them right away.  Chefs salad is great because we can literally use anything.  Asian inspired salad with mandarin oranges is a family favorite.  Slaws galore.  And we've even added a dry ramen noodles salad to our mix.

Ingredients
  • 1 Bunch of Greens (How2ever much you have or whatever kind you can get your hands on.)
  • 1 Other things (cucumbers? carrots? can of beets? corn? whatever sounds like it can pass for a vegetable.)
  • 1 Cabbage
  • 1 Fruit (Making slaw? Consider adding an apple, great crunch wonderful sweetness.)
  • 1 Other stuff .. hard boiled egg? veggie deli? plant based chicken nuggets? Cheese?
  • 1 Tortilla strips (Tortilla strips fried in oil make a wonderful garnish for salads.)
  • 1 Small cooked pasta
  • Ginger Dressing
  • .25 cups Apple Cider Vinegar (If you have rice wine vinegar great. If you have distilled white vinegar you clean your floors with that works. We make do with what we have.)
  • .25 cups Soy Sauce (Salt. Add salt if you don't have any. Teaspoon.)
  • 1 teaspoon Fresh grated ginger (I keep my ginger in the freezer and use a microplane to grate just what I need.)
  • 3 cloves peeled garlic (You may want to use less, I seem to be using ALOT of garlic during the pandemic, I may be mistaking it with vampire cures.)
  • 1.5 cup Olive Oil (Generic vegetable oil works fine too, whatever you have.)
  • 1 teaspoon Sugar
  • Mustard Vinaigrette
  • 1 cup Olive Oil (Any oil you have is fine.)
  • .3 cups Red Vinegar (Any vinegar can substitute.)
  • 1 teaspoon Prepared yellow mustard.
  • 2 Cloves garlic peeled
  • 1 Other stuff ... parsley? basil? oregano? cilantro?
  • Ranch
  • 1 cup Sour Cream
  • .25 cups Mayo
  • 1 juice from lemon
  • dill
  • Salt and pepper to taste
  • Simple Slaw Dressing
  • 1 cup Mayo
  • 2 lemons (juiced)
  • 1 tablespoon sugar
  • 1 teaspoon Salt
  • Vitamix French Dressing
  • 1 cup Light Tasting Olive Oil
  • .5 cups Sugar
  • .5 cups Rough Chopped Onion
  • 1 Stalk Celery Rough Chopped
  • .5 cups Ketchup
  • .5 cups Apple Cider Vinegar (We like vinegar, you can decrease this to taste.)
  • 1 Dash Chili Powder
  • .25 teaspoons Paprika
  • Salt to taste
  • Non-Dairy Green Goddess
  • 2 Avacados
  • 2 tablespoons Fresh chopped basil
  • 3 tablespoons Mayo (Vegan if making vegan dressing or omit)
  • .5 cups Olive Oil
  • 2 lemons juiced
  • .5 cups water
  • salt and pepper to taste
Instructions
  1. When we can get fresh greens we make salads. We make salads for everyone and often dress them before serving them individually.
  2. Ginger Dressing
  3. We blend all of the ingredients in a mason jar and use with a side salad featuring mandarin oranges. Or a main dish with fried tortilla strips and Gardein mandarin chicken or plant based buffalo wings.
  4. Mustard Vinaigrette
  5. Sometimes we blend our "Italian dressing" with non-smoked provolone or a mozzarella cheese stick. If salad is our meal we add plant based deli, hard boiled eggs, pasta, corn or cheese. (On this night, the redneck asked for "thousand island" .. so mayo, ketchup, pickles BOOM! As you wish ♥)
  6. Ranch
  7. Ranch dressing is wonderful on a side salad or as a dip with crunch wraps.
  8. Simple Slaw Dressing
  9. Slaw moves from a side to a main dish with pasta shells and or chopped hard boiled egg. For a twist on cabbage salad, use crushed ramen noodles pre-soaked in ginger dressing then tossed with sliced nappa cabbage and carrots.
  10. Vitamix Catalina Dressing
  11. You can make this with a stick blender or food processor to puree the celery and onion to a smooth and creamy dressing with the perfect blend of sweet and tangy goodness. Place all of the ingredients in your Vitamix personal size cup and use the soothie setting to blend until smooth. Serve with fresh greens or a tangy dip for chickie nuggets, veggie burgers or taco salad!
  12. Non-Dairy Green Goddess Dressing
  13. Place sliced avacado, the juice from two lemons, fresh basil, mayo, water, oil, salt and pepper into blender and puree until light and creaming goodness
