Corn dogs always seemed daunting. And we never have wooden skewers just hanging around so it isn’t one of our goto family meals. But then we saw some people make MINI CORN DOGS and that sounded doable if not also adorable for the kiddoes in our home. We made a batch of both veggie dogs and uncured meat dogs and still had batter left over to make a couple loaves of corn bread that will go well with scrambled eggs in the morning.

Combine all of the ingredients in large mixing bowl and stir with a wood spoon or heavy fork until batter is smooth.

Heat oil until 380° Cut each hot dog into three pieces. Dip each hot dog bit into the batter and carefully lower into the oil. Deepfry for 3-4 minutes until lightly browned and crispy. Cook in batches being mindful to not overload your pan.
