Easy TVP Rice Bowls

TVP makes for a lovely vegetarian protein. It's naturally gluten free and made only from defatted soy flour that has been cooked under pressure and then dried Depending on what you use to rehydrate the bits, you can achieve any flavor. Tonight we made an Asian inspired rice bowl. It's economical, easy to store and quick to prepare.

Ingredients
  • 2 cups TVP
  • 1.5 cup Water or Broth
  • 6 tablespoons Butter
  • 3 Large Carrots Shredded
  • 3 tablespoons Soy Sauce
  • 2 teaspoons Brown Sugar
  • 2 teaspoons Fresh Grated Ginger
  • 1 Bunch Scallions slivered (For Topping)
  • Ginger Mayo Condiment
  • 1 cup Mayo
  • 1 tablespoon Fresh grated ginger
  • 1 teaspoon Fresh grated turmeric
  • 2 Cloves Crushed Garlic
  • 2 tablespoons Ketchup
  • .33 cups Water (third cup)
  • .5 teaspoons Sugar
Instructions
  1. Melt your butter and seasonings in a pan until the water comes to boil and then add your tvp and stir. Simmer 5-10 minutes. Serve on top of rice with fresh sliced scallions.

  3. Add all of the ingredients to a mason jar and mix well, serve chilled.
