Ingredients
  • 2 pounds Extra Firm Tofu ((two tubs))
  • 2 Large Eggs
  • 2 tablespoons Cream or Whole Milk
  • 1 Slice of Bread
  • 1 Sleeve of Ritz Crackers
  • Oregano
  • .5 teaspoons Thyme
  • 1/4 teaspoon Pepper
  • .5 teaspoons Salt
Instructions
  1. Drain the tofu and slice each brick into 5 equal steaks. Place on paper towels to drain.
  2. Combine the eggs with milk in a shallow bowl.
  3. In a food processor, blend ritz crackers, bread and seasoning. Place in shallow bowl.
  4. Dip tofu into the egg mixture, then the crumb mix and saute over medium high heat until brown and toasty. About 2-3 minutes per side.

Need to make this vegan?  Use your favorite eggless pancake batter, or whip up 1 cup soymilk with 1 cup flour and 2 tsp baking powder.
