Breakfast Crisp

We do eggs a dozen different ways for breakfast. Sometimes egg whites only, scrambled or eat at your own risk sunny side up. This morning we kicked up the protein by adding non-fat cottage cheese and topped it with low fat cheese for a lovely crisp breakfast tortilla slice.

Ingredients
  • 4 Eggs
  • .5 cups Low Fat Cottage Cheese
  • 2 ounces Low Fat Mozzerella
  • 2 ounces Low Fat Cheddar Cheese
  • Salt and Pepper to taste
  • 1 Burrito Sized Tortilla
Instructions
  1. Heat your cast iron skillet over a medium heat. Whip eggs with a fork then add cottage cheese and continue to stir into well incorporated. Place a small amount of oil in the bottom of the pan (optional). Place your tortilla in and pour your beaten egg mixture right on top. Sprinkle with your cheese and bake in a preheated 400° oven for 10 minutes or until done.
