Breakfast Crisp

Ingredients:
- 4 Eggs
- 0.5 cup Low Fat Cottage Cheese
- 2 oz Low Fat Mozzerella
- 2 oz Low Fat Cheddar Cheese
- Salt and Pepper to taste
- 1 Burrito Sized Tortilla
Directions:
Heat your cast iron skillet over a medium heat. Whip eggs with a fork then add cottage cheese and continue to stir into well incorporated. Place a small amount of oil in the bottom of the pan (optional). Place your tortilla in and pour your beaten egg mixture right on top. Sprinkle with your cheese and bake in a preheated 400° oven for 10 minutes or until done.
