Bran Breakfast Muffins

We sifted some extra bran from our whole grain spelt flour and added it to make these breakfast extra fiber healthy. A protein boost from greek yogurt creates a moist crumb and with two ripe banans you can easily omit the scant amount of brown sugar. This batch made 12 regular muffins plus 24 mini muffins.

Ingredients
  • 2.5 cups Extra Bran Spelt Flour (We ground our spelt berries then sifted once to capture a cup of bran then added it to unsifted flour to make our fiber rich flour. Processed all of it in the Vitamix to create a very fine "pastry" flour for baked goods.)
  • 1.5 teaspoon Baking Powder
  • .5 teaspoons Baking Soda
  • .5 teaspoons Salt
  • 2 Eggs
  • 2 Bananas
  • .5 cups Greek Yogurt
  • .25 cups Light Tasting Olive Oil
  • 1 cup Milk of choice
  • 2 tablespoons Brown Sugar (May omit if bananas are super ripe)
  • 2 teaspoons Vanilla
  • Dash Spices (We used a dash of nutmeg and clove)
  • Dark Chocolate Chips (Optional)
Instructions
  1. We blend our flour in the vitamix to create a lighter consistency than our countertop grain mill can produce. So it was easy work to just add the remaining ingredients to the vitamix and blend for a couple minutes to create a smooth batter.
  2. Pour into lined or greased muffin pans. This batch made 24 mini and 12 regular size muffins We also sprinkled half with dark chocolate chips. Bake at 375° for 20 minutes or so depending on size of your muffins
