These waffles are light an fluffy despite being made from 100% whole grain flour. They’re hearty, filling, lightly crisp outside, soft inside, and surprisingly high in protein thanks to the eggs and Greek yogurt.

- 4 Cups Whole Grain Flour (we use Spelt)
- 6 Large Eggs
- 3 Cups Milk
- 2 Cups Greek Yogurt
- 2 TBL Baking Powder
- .25 tsp Baking Soda
- 1 tsp Salt
- 1 tsp Vanilla
Directions:

Grind the spelt berries into fresh flour.
In a large bowl, whisk together eggs, milk, yogurt, and vanilla.
Add freshly milled spelt flour, baking powder, baking soda, and salt.
Stir until combined. Let the batter rest for a few minutes while the waffle iron heats.
Cook in a preheated waffle iron until golden brown and crisp.
