Whole Grain Brioche Two Ways

Admittedly, I didn't gauge my flour well when making this dough and we ended up with enough for TWO LARGE LOAVES. So one because a lovely Green Olive Brioche and it was a big hit. The egg and oil in the bread make for a light and fluffy crumb even when using whole grain flour.

Ingredients
  • 8 cups Whole Grain Spelt Flour
  • 2.5 tablespoons Rapid Rise Yeast
  • 4 cups Water
  • .5 cups Olive Oil
  • 4 Whole Eggs
  • 1 tablespoon Salt
  • 4 tablespoons Sugar
  • Optional for second loaf
  • 1 cup slided green pimento olives
Instructions
  1. We grind our wheat berries fresh and used spelt for this bread.
  2. For an extra fine flour we also place the ground wheat berries in the Vitamix for a minute.
  3. Placing all of the ingredients in our Kitchen aid equipped with the dough hook, we added additional flour as necessary to come to a sticky dough.
  4. We split the dough into two sections and braided one for a large ceramic pan and mixed a cup of sliced green olives and pimentos into the other. Let rise until doubled in size, 1-2 hours. Bake at 350° for about 45 minutes.
