Vegan Cream of Asparagus Soup

The perfect quick vitamix soup that makes good use of left over asparagus. Based on now much left over asparagus you have, you will need to adjust the other ingredients.

Ingredients:
- 1 Pound Steamed Asparagus
- 1 bunch Flat Leaf Fresh Parsly
- 1.5 cups Creamy Oat Milk
- 4 TBL Vegan Butter or Olive Oil
- 4 TBL Flour
- Salt and Pepper to taste
Directions:
Combine asparagus, parsley and oat milk in blender and process until smooth.
In a sauce pan melt your vegan butter and whisk with flour until smooth. Gradually add your asparagus puree and whisk over low heat until thickened. Season to taste. Is lovely as a soup or topping for pasta.
