Tortilla Pizza

Ingredients:

  • 10 Large Tortillas
  • 1.5 lb Mozzarella cheese grated
  • 2 Cans chopped tomatoes
  • 2 cloves crushed garlic
  • 1 tbsp Basil
  • 0 Salt and Pepper to taste
  • 0 Mushrooms, Olives, Pineapple, Veggie Sausage

Directions:

1. Preheat oven to 425°F. Line baking sheets with parchment paper or lightly oil them.

2. Drain the canned chopped tomatoes, reserving the liquid for another use. Combine the tomatoes with crushed garlic, basil, salt and pepper to make a simple chunky pizza sauce.

3. Prepare your toppings. Slice the mushrooms and olives, chop the pineapple and cook and crumble the veggie sausage if needed.

4. Arrange the tortillas on the prepared baking sheets. For a crispier crust, bake the plain tortillas for 3–4 minutes before adding toppings.

5. Spread a thin layer of tomato sauce over each tortilla, leaving a little room around the edges.

6. Sprinkle generously with grated mozzarella, then add your favorite combination of toppings.

7. Bake for approximately 8–12 minutes, or until the cheese is melted and bubbly and the tortilla edges are golden and crisp.

8. Remove from the oven and allow to cool for a minute or two before slicing into wedges.

Set everything out buffet-style and let everyone build their own pizza. It's pizza night without making dough, and nobody has to agree on toppings!
