Tofu Skillet Dinner

Who doesn't need a ONE POT easy meal any night of the week? Chicken and Rice recipes have been popular for nearly 200 years and with the substitution of tofu for poultry it makes an easy family meal with little prep and a short cooking time on the stove.

Ingredients
  • 32 ounces Tofu
  • 2 cups Organic Jasmine White Rice
  • 1 stick Butter
  • 4 cups Water
  • 1 teaspoon Dill
  • .5 teaspoons Oregano
  • 1 teaspoon Salt
  • .5 teaspoons Pepper
  • 2 teaspoons Onion Powder
Instructions
  1. Slice each brick of tofu into four large cutlets. Place in large bowl and coat with seasonings (reserve 1 tsp of fresh turmeric for later). Melt a stick of butter in a large cast iron pan and sauté the tofu for 5 minutes on each side.
  2. Remove tofu from the pan and add the chopped onion and cook until tender. Add the rinsed and drained Jasmine rice and sauté until all of the grains are well coated with flavor.
  3. Add the water and remaining turmeric and gently place the tofu back in the skillet.
  4. Cook on medium high heat until it comes to a boil then lower the heat and simmer for 20 minutes or until all of the water is absorbed.
