That Egg Sandwich Thang

Ingredients:
- 2 slices bread
- 2 Large Eggs
- 1 slice of Colby Jack Cheese
- 0 oil, butter or plant butter for the pan
- 0 Salt and Pepper to taste
Directions:
1. Heat your pan:
* Lightly butter or spray your pan and heat over medium-low.
2. Add the eggs:
* Pour the beaten eggs into the pan, tilting to spread evenly.
3. Dip the bread:
* Quickly dip each side of the bread into the uncooked egg in the pan, then lay the slices down side by side on top of the eggs.
4. Cook the eggs:
* Let the eggs cook fully until mostly set.
5. Flip:
* Using a spatula, carefully flip the entire egg-and-bread piece over in one motion.
6. Fold the egg edges:
* Fold any overhanging egg edges onto the bread slices so you have a neat rectangle.
7. Add cheese:
* Place your cheese on top of one slice.
8. Assemble and brown:
* Fold one slice of bread over the other to make a sandwich.
* Continue cooking, flipping as needed, until both sides of the bread are golden brown and the cheese is melted.
9. Serve:
* Remove from the pan, slice if desired, and enjoy immediately.
