Sourdough Discard Crumpets

If you are like most people who are growing their own yeast starter because the pandemic ingredient shortages, you are probably looking for things you can do with the “discard” starter.  We enjoy the flavor our sourdough starter gives to pancakes, waffles or biscuits.  But when I saw Kind Author  had a recipe for crumpets that used ONLY sourdough starter (and a few other ingredients) I was intrigued to try.  These were especially easy, light and flavorful.  We used oiled mason jar lids, but I may look for a few more cookie cutter molds because they will release better without losing my bliss.

Sourdough Discard Crumpets

Instructions

  1. Mix the ingredients in a large pour spout batter bowl. When you add the baking powder the batter will rise and become light and airy.
  2. Oil your molds and place on medium heated griddle. Pour batter into each mold and cook until the top is no longer wet and you can see little holes all over. Remove ring and flip, cooking on the other side just a minute or two to lightly brown. Tip: We used mason jar lids and a pair of tongs and a fork to press the crumpet out of the mold before turning.
