Soft and Chewy Almond Butter Cookies

Making nut butters is easy and you get to decide if you add sugar, salt or added oil.  For this recipe we used almond butter made from 100% Roasted and Salted Almonds.  By heating them up in the microwave for 2 minutes it releases the natural oils in the almonds and no added oil or salt was needed to make this wonderful almond butter base for these cookies.  Store bought almond butter or even peanut butter works fine.

Ingredients
  • .5 cups Plant Butter
  • 1 cup Almond Butter
  • .5 cups Sugar
  • .5 cups Brown Sugar
  • 1 tablespoon Oat Milk
  • 1 tablespoon Vanilla
  • 1 Egg
  • 1.25 cup Flour
  • 1 teaspoon Baking Powder
  • Dash of Salt
Instructions
  1. Place all of the wet ingredients (everything except the flour and baking powder) in your food processor or high power blender and blend until smooth. Next mix your flour and baking powder and salt in a medium size bowl and then add the wet mixture and fold gently until all of the flour is encorporated.
  2. Using a dough scoop or spoon, place 12 balls per parchment lined baking sheet. Take the back of a spoon to flatten them each down. Or you can use the traditional fork tines to make a hash mark. Back in a 350° oven for 9 minutes.
