Made popular in the 1970s, Betty Crocker popularized the Bisquick's Impossible Pie . In this version we use whole grain flour and quite honestly you could use ANY LEFTOVERS in the fridge for the filling. Topped with cheese and then this simple batter, its a quick and easy casserole for busy nights.

Ingredients
8 ounces veggie burgers (You can use veggie crumble, TVP, tofu or even scrambled eggs.)
1 cup Frozen peas (You can use any veggie fresh or frozen)
2 cups Cherry tomatoes (You can use 1 cup of pasta sauce)
1.5 cup Grated Colby Jack Cheese (Mozzarella would be wonderful)
1 cup Whole Wheat Flour
1 tablespoon Baking Powder
3 Eggs
1.5 cup Buttermilk
Instructions
Cook your veggie filling in a extra large cast iron pan.
Add cherry tomatoes and cover over low heat. Simmer until the tomatoes break down. Using a wooden spatula you press and crush the tomatoes. Add peas and cook for another 1-2 minutes.
Combine the ingredients for the batter and mix until it looks like a thick pancake batter.
Sprinkle the cheese over the filling and pour the batter over top.
Bake in a 400° oven for 30 minutes.
