Simple Ginger Apricot Jam

Ingredients:
- 4 Cups Chopped Pitted Apricots
- .5 Cup Sugar
- 1 tsp Lemon Juice
- 1 tsp Fresh grated ginger
Directions:
Place the chopped apricots, sugar, lemon juice, and grated ginger in a medium saucepan.
Stir everything together and let it sit for about 10 minutes, until the apricots begin releasing some juice.
Set the pan over medium heat and bring the mixture to a gentle simmer, stirring often.
Reduce the heat to medium-low and cook for 25–35 minutes, stirring frequently and mashing the apricots with the back of a spoon as they soften.
Continue cooking until the fruit has broken down and the mixture is thick and jammy. It will thicken a little more as it cools.
Remove from the heat and spoon the jam into a clean jar.
Let it cool, then cover and refrigerate.
Because this is a low-sugar jam, keep it refrigerated and use within about 2 weeks, or freeze it for longer storage.
