Sheet Tray Sausage and Tots

Sometimes you need EASY. Which in truth can mean cheap, quick, or easy to prep and pop in the oven. Sheet pan dinners check all the boxes with easy prep and one pan clean up. And you can make so many things with this chop and roast theme.  Tonight we found some organic tater tots and added a few variety of veggie sausages, but tofu would have been just as lovely.

Ingredients
  • 2 pounds Frozen Organic Potato Puffs (Sprouts, Simple Truth or Cascadian Farms all have lovely organic tater tots)
  • 8 ounces MorningStar Breakfast Links
  • 14 ounces Tofurky Plant-Based Italian Original Sausage (Field Roast makes a lovely Sausage as well)
  • 1 pound Organic Mini Bell Peppers
  • 1 Red Onion
  • 1 pound Yellow Squash
Instructions
  1. Line an extra large sheet pan (or two smaller trays) with parchment paper and preheat the oven to 400°. Scatter frozen tater tots and morning star frozen links all over the pan. Chop your veggies a little larger than the frozen spuds and distribute them around the pan. Slice your tofurky in 1.5" slices and fill in the holes where there is room. Bake for 30-40 minutes or until everything is roasted and lightly brown.
