Ramen Slaw

This super easy side salad uses the food processor to make quick task of chopping all of the veggies. You can easily substitute any of your family favorites or classic like cabbage, but tonight this is what we used and it was lovely.

Ingredients
  • 5 Carrot (sliced lengthwise)
  • 1 pound Brussle Sprouts (trimmed)
  • 1 Small Red Onion
  • 1 Small piece of red cabbage
  • 2 Packages of Ramen Noodles (crushed)
  • Ginger Dressing
  • 1.5 cup Light tasting Olive Oil
  • 2 Cloves Garlic
  • 1 teaspoon Sugar
  • 1.5 tablespoon Grated Ginger
  • .25 cups Soy Sauce
  • .25 cups Apple Cider or Rice Wine Vinegar
Instructions
  1. Thinly slice all of the vegetables. We used our food processor with the slicing blade. To help digestibility, we blanched the sliced veggies in boiling water for about 3-4 minutes. Combine veggies with ginger dressing and crushed ramen noodles and let sit for 3+ hours to soften slightly. Serve chilled.
