Ramasagna Viral

Okay, Karma saw this on social media and it was a "frugal week" so she suggested this to the family -- or surprised them with it depending on who you ask. And truth be told sometimes the circle of in-the-know is just Tricia and Karma, but the family is gracious and kind if not relentless in their callbacks of meals that DID NOT WORK. Like the time we tried to make PIZZA in the slow cooker. Cut to the chase this noodle and cheese dish DID NOT work out well at all. Despite extra time cooking, even with a sheet pan lid on the baking dish and we tried to salvage it by adding more water during in the middle of baking.  It was a FAIL. So why include it here? Well, sometimes we forget (that would be Karma, and she's apt to want to re-create this again jus to try and REDEEM herself with some version of but I made it different this time.) So hopefully we can nip that in the bud now. However IF you really want to try this at home .. USE WAY MORE WATER than you think you should.

Ingredients
  • 5 boxes of Halo Organic Ramen Noodles (Each Halo package has four small pucks of ramen.)
  • 4 cans organic chopped tomato
  • .5 cups fresh basil
  • 4 large carrots
  • onion
  • 2 pounds Mozzarella cheese
  • 16 ounces Ricotta
  • Salt and Pepper to taste
Instructions
    Sauce
  1. Sauté carrots and onion for 10-15 minutes to soften and add a bit of color. Then place in a large blender or food processor (Vitamix) with the tomatoes, basil salt and pepper to taste.
  2. Start with a layer of sauce on the bottom of your pan and then a layer of uncooked ramen.
  3. Top with ricotta cheese
  4. Sprinkle with half of the mozzarella (grated)
  5. Add more sauce Then repeat.
  6. Bake in a 350° oven covered for 45 minutes.
