Schnauzers are renowned for developing pancreatitis, before we realized that sad fact our Bitzy use to LOVE LOVE LOVE corn bread, especially if we were having bacon with the meal. No more table treats for her. But every now and zen Karma cooks up a little something special for her to have as a safe treat. Sometimes its a tiny bite of boiled, skinless, boneless chicken. Or a little bit of an egg white microwaved forĀ  minute in a little cup without any oil or butter or seasoning. But the other night when we were having a lovely winter stew with a slice of whole grain corn bread, we could see that Bitz looked VERY SAD. So the next day, we whipped up a special mini muffin that she could enjoy. Since we are not animal nutritionists, the ingredients we used may not be safe or recommended for your dog. And we certainly don’t let her have more than a small bit as a treat, since her main micronutrients and dog specific enzymes etc. come from her commercial brand low fat dog food. But she LOVED having her own special corn bread. We left a few out and popped the rest in the freezer.

The addition of non-fat greek yogurt and one egg white helps this to be super low fat and high protein with whole grain goodness.

  1. Mix your dry ingredients together, then make a well and pour your wet ingredients into the center and mix well until you have a thick batter. Spoon into ungreased mini muffin pans (we used ones with a ceramic coating, but you could also use muffin pan liners to avoid adding oil). Bake at 400 for 10 minutes or until done. Cool completely then remove from pan and store in air tight container in the fridge or freezer.
